Ingredients

  • 4 courgettes (that fi t in steam basket)
  • 240 g cooked white basmati rice
  • 120 g mushrooms (button, chestnut or wild) cooked
  • 1 tablespoon grated parmesan cheese
  • 1 tablespoon olive oil
  • ½ bunch coriander leaves, chopped
  • 40 g sun-dried tomatoes in oil, diced
  • Fine sea salt and pepper

Preparation

Slice the top off the courgettes and hollow out the centre.. Mix the basmati rice, mushrooms, parmesan, olive oil, coriander and diced sun-dried tomatoes. Use this mixture to stuff the courgettes. Put in the steam basket.

Steam for 15 minutes with the starter and the dessert.

Serve immediately.
