Place the sugar and honey in a pan. Warm over low heat. Add two pinches of salt and the diced butter. Stir for 5 minutes.
Remove from heat, add the cream, and stir for 3 minutes. Leave to cool and refrigerate.
Peel and dice the apples. Stir in a knob of butter, then add the caramel and allow to caramelise. Set aside. Pre-heat the appliance.
Spread caramel on the inside of each croque. Spread over half of the apples. Close the croques and press on the top. Toast them in the appliance for 5 minutes. When you serve them, add the diced apples onto each croque and pour the salted caramel over the top.
