Dilute the yeast in the lukewarm milk. Then add the mixture to the flour. Add 1 pinch of salt and the egg yolks.
Cover with a cloth and leave to rise for 3 hours in a warm place. Beat 2 egg whites to peaks, add sugar. Add the egg whites to the dough.
Then add the crème fraîche.
