Wash and core the apple. Score a ring around the centre of the skin, so that the apples do not burst. Mix the sugar, dried fruit and cinnamon together. Line the basket with a circle of foil.
Place the apples in the basket and stuff with the dried fruit mixture. Put the water and lemon juice in the pan, together with the trivet. Stand the basket inside.
Use pressure level 1. close the lid and bring to pressure. Cook for 7-8 minutes. Remove the heat. Turn the pressure selector to the steam release position or place the cooker under cold running water.
If the apples require longer cooking just close the lid; bring to pressure again, and cook for another 1 or 2 minutes. Remove the apples and rub with a little butter to give them a shiny glaze.
